Bacon & Goat Cheese Frittata


  • 1 onion – chopped
  • 1 Pepper – chopped
  • 8 slices of bacon – chopped into bits
  • 4 oz goat cheese
  • 1 handful of basil


Preheat your oven to 350F

Crack the eggs into a bowl and whip with a fork – season with salt and pepper. Fry up the bacon bits until crispy, then add the onion and pepper until softened. Chop the basil and mix with goats cheese to form chunks. Drain the excess fat from the fry pan and mix in the eggs. Add the goat cheese and basil and cook on the stove top for 3 minutes (wiggle the pan to get the cheese to settle and be covered by the eggs). Place pan into preheated oven for 10-12 minutes until eggs are firm and then remove from oven.

Run a small knife around the edge of the pan between the egg crust and pan. Place a plate on the top of the pan and gently flip over and lightly jiggle. Once the frittata is upside down on the plate, place another plate on the bottom and flip over. Slice the frittata like a pie and serve!

BONUS: If you have parmesan cheese, throw a bit on top of the frittata before baking!
